Beef Burritos
Ingredients:
1 lb. Beef (I use Flap Meat)
8-10 Burrito-size Tortillas
28 oz Frozen Hash Browns (single ingredient on label, no oils)
6-8 Eggs Scrambled
1 1/2 Cup Shredded Cheese (I like using Colby Jack)
2 Medium Avocados
Your choice of salsa (I like salsa Verde best in these burritos)
Instructions:
1) Heat frozen hash browns according to the instructions (I prefer the oven)
2) Cook your meat, then chop it into small pieces
3) Scramble your eggs, and shred the cheese
4) Assemble the burritos. Start by heating the tortillas so they do not crack when folding the burrito.
5) You can add each item in any order, but here is mine. Hash browns, then meat, next cheese, then eggs, and finish it with avocado and salsa.
6) Fold the edges in, then roll the burrito
7) Heat your pan again with butter and heat the burritos on the side with the end of the tortilla; this will keep it from opening up before serving.
