Creamy Chicken Pasta
Ingredients:
16 oz pasta
1 pound chicken breast
1 white onion
8 garlic cloves, minced
3 pounds of tomatoes
1/3 cup heavy cream
1/2 cup parmesan cheese
2 Handfuls of fresh spinach
Seasoning
Salt, pepper, paprika, garlic powder, onion powder, and italian seasoning
Instructions:
If you have a blender, you can save time by chopping onions and tomatoes in larger chunks to cook and then blend. If not, chop the onion and tomatoes finely.
Heat a pan on medium with butter or oil, add onions and cook until translucent, about 5 minutes.
Add minced garlic to the onions, cook for another 2 minutes.
Chop tomatoes and add them to the pan. Add seasoning. Cover and let cook 10-15 minutes.
Start cooking pasta. Follow instructions on pasta box.
Prepare the chicken by trimming. (if its red or white cut it off). Then drizzle with olive oil and season with salt, onion powder, garlic powder, and paprika.
Heat a pan with 1/2 tbsp butter, add chicken, and cook for about 7 minutes on each side. (internal temp of 165 degrees)
Remove sauce from heat. Blend sauce, but if you are not able to or prefer a chunkier sauce, skip the blending.
Put the sauce back in the pan, add in parmesan cheese and stir.
Add heavy cream. Taste test. Add more seasoning if needed.
Rip spinach into smaller pieces and add to sauce.
Drain pasta when done, add sauce and serve.
