Parmesan Chicken

1 pound chicken breast

1/3 cup fresh or dried parsley

4 Tbsp butter

1/3 cup grated parmesan cheese

Seasoning: Salt, pepper, garlic powder

Sides: Potatoes and Broccoli

24 oz baby potatoes

2 lbs. of Broccoli

1/4 cup olive oil

Seasoning: Salt, Cajun, garlic powder, onion powder, and herb mix

Instructions:

If you are making the sides with the chicken, start the potatoes first

  1. Preheat oven to 425 degree ferenhight

  2. Cut potatoes into 4s and place them in a bowl.

  3. Add olive oil and seasoning to the potatoes and spread them on a baking dish and cook in the oven for 45-50 minutes or until tender on the inside.

  4. Trim chicken and cut into bit size chuncks, put in a bowl and set aside.

  5. Melt butter, then add parsley, parmesean, and seasoning, and mix together.

  6. Add the butter mixture to the chicken and toss until evenly coated.

  7. Heat a pan and add chicken, cook 10-12 minutes until internal temp is 165 degrees.

  8. Cut the broccoli into smaller pieces, and steam 5-8 minutes.

  9. Serve chicken, potatoes, and broccoli together.
